Observation (CORRECTED DURING INSPECTION): 1. Potato cutter that is mounted on the wall observed to be left dirty overnight.
2. Dipper well observed to be left dirty over night.
Corrective Action(s): Instructed staff to immediately clean and sanitize the two equipment.
Do not leave equipment dirty overnight. Always clean everything before closing. Leaving dirty items overnight will attract pests.

Observation: 1. Ventilation hood observed to be greasy and dusty. Operator stated that he cleans the hood once every two weeks.
2. Food debris and other garbage is observed under and behind equipment and shelving.
3. High touch surfaces like some of the cooler/freezer door handles observed to be sticky.
4. Dirty mop water observed in the mop bucket from last night.
Corrective Action(s): 1. Please clean the hoods and increase routine cleaning of ventilation hood to once a week since summer is a lot busier. To be completed by: July 18, 2023

4. Please ensure dirty mop water are not stored over night to avoid attracting pests. To be completed by: Today.

Inspection conducted just as facility opened
- Handwashing station is functional with water, liquid soap, paper towels.
- All coolers 4C and below
- All freezers -18C and below
- Bleach water sanitizer initially measure greater than 200ppm
- Three compartment sink available for manual dishwashing.
- Dipper well is operational, not in use as ice cream hasn't started selling.
- No signs of pests
- Operator has valid FOODSAFE certificate

Note:
- Handwashing station hot water faucet is not working, however water temperature for handwashing is satisfactory. Operator in the process of getting it repaired.
- Liquid soap is supplied however inconvenient to use. Operator is getting a working soap dispenser.
- Bleach sanitizer mix is half a cap (half a teaspoon) of bleach to 1L of water to create 100-200ppm bleach sanitizing solution.
- Please do not leave cleaning to the morning. Please clean the facility at night to avoid attracting pests. Kitchen should open clean.
- Do not store potatoes on the floor.
