Observation (CORRECTED DURING INSPECTION): Raw meats, cut vegetables and sprouts held in cooler at 9.7C. Staff say that the temperature of the cooler rises during use. Cooler temperature should not rise to this extent. Discarded all potentially hazardous foods kept in the cooler >2 hours (sprouts, some raw meats, coconut milk). Moved all other potentially hazardous foods to a working cooler.

Observation: Ice machine has some black mould growth inside.

Corrective Action(s): Turn off the ice machine. Discard all of the ice. Clean the entire machine with warm soapy water, then rinse and apply bleach sanitizer (100 ppm). Air dry. Clean and sanitize the ice machine at least every 2-3 months to maintain.

Observation: Some rat droppings observed in the kitchen and near the back door.

Corrective Action(s): Mixed up a strong concentration of bleach in a spray bottle (at least 1 part bleach to 10 parts water). Spray on droppings and wipe up with a paper towel. Must hire a pest control company and have them come immediately to conduct an inspection and set up traps. A pest control report must be provided to the inspector by follow-up inspection.

Observation: The entire kitchen requires a clean. Noted areas that are especially dirty:
- All kitchen equipment (coolers, grills, deep fryers, microwaves) - sides, underneath and behind. Coolers and microwaves must be wiped down daily. Floors must be swept and mopped daily in the entire kitchen to prevent grease build-up. Grease is a pest-attractant.
- Ventilation filters - these can be run through the dishwasher
