Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (High temperature dishwasher did not have chemicals connected to the unit. Staffs say that they manually add the chemical (sodium peroxide) to the dishwasher. Owner informed that the tube was supposed to be hooked to the chemical but was forgotten. Final rinse at plate was 63.4C.)

High temperature dishwasher adjusted and is now reading 73.4C at plate, >90C at gauge. See thermo-label.

Correction order rescinded. Please run all dishes and utensils through dishwasher before use for dinner service.
