Observation (CORRECTED DURING INSPECTION): Both service counter handwashing stations lacked paper towels. Keep all hand washing stations fully stocked.

Observation: There are still a few fruit flies in the kitchen, although far fewer than previous.
Note that tiles under sink has been repaired. Good.
Pay special attention to grease trap cover under sink when cleaning. Bits of food debris can accumulate and attract flies.

Premise is clean and well maintained.
Kitchen hand sink is fully stocked; all hand sinks are working.
Fridges are under 4 Celsius.
Hot holding is over 60 Celsius.
Sanitizer was in active use and was 200 ppm.

Note that sanitizer is used for cleaning the ice cap mixer arm. No separate washing and rinsing step. \
