- Handsinks in the kitchen and service areas are stocked
- 200ppm QUAT sanitizer used in the kitchen
- Low temp dishwasher had >50ppm chlorine residual
- Equipment and food contact surfaces (meat slicer, mixer, ice machine) are maintained in sanitary manner
- Temperatures of refrigeration units meet regulatory requirements (<4C coolers, <-18C freezers)
- Temperature log is in place
- Foods are stored off of floor
- Meats stored on the bottom shelf in the walk-in freezer
- Dry storage is kept clean & organized
