Observation (CORRECTED DURING INSPECTION): Pollock, raw shrimp, and raw squid double stacked inside prep cooler insert - items were probed at 11C and 12C. Items on the bottom layer were probed at 4C. This is a continuing infraction.
Corrective Action(s): Do not double stack items in the inserts for the prep cooler - there is insufficient contact with the insert to maintain cold potentially hazardous foods at 4C or less to prevent the growth of pathogens and or the formation of toxins. 1 container or pollock, 1 container of raw shrimp, and 1 container of raw squid was discarded at the time of inspection.

Comments

-Follow-up inspection to July 5, 2017.
-Bean sprouts are stored in a container of water with ice on the top. Water was being changed and new ice was added to the sprouts at the time of inspection and temperature of the sprouts could not be checked. Ensure water is periodically emptied and new ice is added as it melts in order to maintain sprouts at 4C or less at all times.
-Staff are no longer stored old food boxes by the back door. Ensure all garbage is properly removed in a timely manner to prevent potential attraction of pests.
-Frozen foods were properly thawing in the prep cooler at 4C.
