Observation (CORRECTED DURING INSPECTION): Purple rice in one of the cookers are measured at 29.4oC. Staff indicated rice has been out since 12pm (now 2:10pm).
Corrective Action(s): Foods in hot holding unit should be maintained at 60oC or hotter. Food discarded.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Discussed manual dishwashing procedures with staff. Staff indicated dishware is first washed with detergent and water, then rinse, and let dry.
2. Staff indicated a Lysol cleaner is used to clean food contact surfaces such as counters, and cutting board.
Corrective Action(s): 1. Sanitizer must be used to sanitize dishware. Follow proper dishwashing procedures: a) wash in soapy water; b) rinse in hot clean water; c) soak in sanitizer for 2 minutes; d) air dry.
2. Santiizer must be used to sanitize food contact surfaces.
A sanitizing bucket is made at time of visit, and staff filled sanitizer in one dishwashing sink.

Observation (CORRECTED DURING INSPECTION): 1. Tools (ie. big whisk in plastic container) and syrup are placed in front of handwashing station, making it difficult to wash hands.
2. A stainless steel container is found in washroom sink.
Corrective Action(s): Handwashing station must be clear of items and accessible at ALL times.

Observation: 1. In-use rice scoops are stored in stagnant water.
2. Open tin cans are noted in 3-door prep cooler.
Corrective Action(s): 1. Store in-use rice scoops in empty container or in ice.
2. Once a tin can is opened, transfer food to a food grade container.

Observation: A few rodent droppings are noted in kitchen and in electrical/mechanical closet.
Corrective Action(s): Remove droppings, and sanitize areas.

Observation: 1. Screen for window in washroom is not intact, as one corner is flying out.
2. A black garbage bag is taped on the wall in back hallway.
3. ALOTof products are stored on the ground in downstairs storage, and very unorganized.
Corrective Action(s): 1. Seal screen properly so no pests can enter into facility.
2. Fix and/or seal wall. No garbage bag should be used.
3. Re-organize area.

Observation: One used scoop is noted at the back table, with purple rice visibly stuck on the scoop. It has been mentioned and reminded to operator that this back table is not to be used for any food preparation, as there is no handwashing station nearby.
Corrective Action(s): This area is not to be used for food preparation.

Note:
1. No hot holding of rice is observed until this routine inspection. This will be reviewed and discussed in follow-up inspection.
2. Again, carpet should be removed from downstairs storage as all surfaces must be durable, smooth, easily cleaned and impervious to moisture.
3. Purchase chlorine test strips to test sanitizer concentration.
