Observation (CORRECTED DURING INSPECTION): Only one bottle of "sani-stuff" present in bakery area, which does not dispense any sanitizer.
Corrective Action(s): "Sani-stuff" sanitizer spray bottle was refilled with sanitizer, but initially had >>>> 200 ppm quaternary ammonium compound (quats). EHO demonstrated how to properly use the automatic dispenser to obtain quats. Afterwards, spray bottle had a concentration of 200 ppm at point of dispensation and inside spray bottle.

*Reminder: Please run the automatic disinfection system for several seconds before feeding sanitizer into the spray bottle to remove residual liquid*

Ensure that this is communicated to all workers in the bakery.

Observation: Potwasher is out of commission.
Corrective Action(s): Repair the potwasher. Date to be corrected by: August 22, 2018. For the time being, 3-compartment sink is being used to wash, rinse, sanitize pots and kitchen utensils.

Comments

Routine inspection conducted. Facility is in good sanitary condition, is well-lit, and receiving area is clear and well maintained. The following observations were made:

1. Temperatures
- Walk-in cooler at 3C
- Walk-in freezer at -18C
- Units equipped with accurate thermometers
- Temperature logs present and up-to-date

2. Hygiene and Sanitizing
- Handwash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Automatic quats feeder is functioning normally and releases 200 ppm quats. Quats test strips present and worker at the beginning of the day maintains a log for quats concentration
- Sanitizer bottles are labelled as "sani-stuff" while other spray bottles are clearly labelled as "water only". Labelling system has improved from previous routine inspection - keep it up
- Dough mixer in sanitary condition
- 3-compartment sink present for manual warewashing

3. Storage
- All food items stored at least 6" off floor
- All bulk goods, including flour, are either fully encased inside food bins or stacked in original packaging. No open flour products / dry goods observed at time of inspection
- Items inside walk-in cooler and freezer and cooling trays are covered

4. Pests
- No recent signs of pest activity observed at time of inspection

A follow-up inspection will occur to check that the potwasher has been repaired.
