Observation: One service cooler at 10C at the time of inspection but not in use and no inventory is stored in the counter cooler. 4C and below is required for storage of food. Only small portion of cooked food prep is used for food preparation within 2 hours then discarded.
Corrective Action(s): Ensure cooler is at 4C and below before restocking this fridge. In the mean time store all other foods in coolers at 4C below or use up fresh ingredients within 2 hours then discard remaining unused prepped food. Correction and repair required in 2 days.

Two dedicated hand sinks available. One for each work station.
Food protected from contamination.
3 compartment sink with 400 ppm QUATS solution available.
Walk in cooler at 4C and below. Stand up freezer at -18C and below.
One hot holding at 65C - pizza display.
Health Permit on display at front sales area.
Staff washroom is sanitary with fully stock hand sink.

Recommendation: There is a minor smell coming from the grease trap. No contamination or broken equipment observed.
Ensure area surrounding grease trap is free of contamination and it is service as needed by a licensed technician.
