Observation: Prep salad cooler at 10C. Operator states that the unit is turned down but the pipes freeze. Operator moved all potentially hazardous foods to a working cooler and understands that the cooler must operate at less than or equal to 4 degrees Celsius to prevent the growth of foodborne pathogens.
Corrective Action(s): Technician has been called. Prep cooler to be serviced today. Operator to call inspector for follow-up once servicing is completed.
