Observation: 1. Black organic buildup noted in the interior (top and sides) of the ice machine.
**Note: This is a repeated violation**

2. 0 PPM chlorine residual detected in the chlorine sanitizer bucket below the 3-part sink.
**Operator corrected the issue during the inspection** - sanitizer was discarded and replenshed with fresh bleach and water mixture. 200 PPM chlorine residual tested after the sanitizer was remade.
Please ensure to replace the sanitizer often, replace especially when it gets cloudy or full of organic buildup. Obtain chlorine test strips to check the concentration of chlorine sanitizer to ensure there is adequate amount before use.
Corrective Action(s): Empty the ice machine, wash, rinse and sanitize all the black organic buildup noted and allow to air dry before use.

Observation: 1. Multiple containers of food in the cooler and freezer units and in the dry storage area stored unprotected/ uncovered.

Observation: Dirty mop water noted in the mop sink during the inspection.

Observation: General sanitation of the facility needs to be greatly improved on. Debris, dark and black buildup noted on the floor in multiple areas. Deep cleaning required in the following areas: Around the 3 compartment sink (sides, legs and caulking - caulking need to be removed and replaced), below the front prep sink, around the legs of most work stations in the back of house area, dry storage area, vent hood and inside the walk-in cooler.
- The inside of the dish washing machine (door ledge and interior) needs deep cleaning.

Routine inspection conducted today -
- Handwash stations (front and back of house and in both patrons' washrooms) were equipped with hot and cold running water, liquid soap and paper towel.
- All refrigerator units were at ≤ 4C.
- All freezer units were at ≤ -18C.
- Rice in rice cooker was > 60C.
- 200 PPM detected in the QUAT sanitizer spray bottle.
- No evidence of pest activities noted during the inspection.
- High temperature dish machine noted at 71C during the rinse cycle at the plate level. The highest temperature noted at the gauge of the dish machine was at 171F during the rinse cycle (must reach 180F at the gauge) - please buy a waterproof thermometer in order to verify that the dish machine is able to reach 71C at the plate level during the rinse cycle or call in a technician to fix the gauge of the dish machine.

- FOODSAFE level 1 verified for operator (on-site at the time of inspection) - expire Feb 3, 2023.
