Observation (CORRECTED DURING INSPECTION): No hot water available at hand sink in the washroom. Noted hot water valve under the hand sink in washroom was turned off. Staff member turned it on at time of inspection. Cold in pump style dispenser, soap and rolls of paper towel available.
Corrective Action(s): Do not turn hot water to hand sink off. Ensure hand wash stations have soap, paper towel, hot and cold running water at all times. Obtain/install a paper towel dispenser in the staff washroom.

Observation (CORRECTED DURING INSPECTION): Noted opened box containing individually packaged bok choy stored beside the meat cutting counter where raw pork was being cut.
Corrective Action(s): Ensure all ready to eat foods such as vegetables are stored away and separate from any raw meat or meat processing areas to avoid cross contamination.

Observation (CORRECTED DURING INSPECTION): Noted a container of frozen tripe stored in cold water.
Corrective Action(s): Ensure frozen tripe is thawed in a cooler unit at 4C or less or under cold running water.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Only rolls of paper towel available in staff washroom. No dispenser available to put paper towel in. Staff on duty said it broke.
Corrective Action(s): Obtain and install a new paper towel dispenser for the staff washroom

Comments

- Premises is a food store. The premises cuts/grinds and repackages various meats. Most vegetables and fruits are sold but during the summer months the premises cuts and sells melons. Some mushrooms are received prepackaged by the supplier but some are received in bulk and portioned at the premises.
- All coolers (retail area, walk in...etc) 4C or less
- Bean sprouts, saran wrap packaged mushrooms, individually packaged salted cod fish stored in retail cooler units at less than 4C
- Freezers -18C or less.
- General sanitation satisfactory. No obvious signs of pest activity noted at time of inspection.
- Hand wash station in the processing area was unobstructed and had soap, paper towel, hot and cold running water.
- Bleach available on site. 100ppm sanitizer available in spray bottles.
- Two sets of drain plugs available for each two compartment sink.
- Meat processing equipment (band saw and grinder) appeared clean at time of inspection. Ensure they are taken apart and thoroughly cleaned/sanitized after each use.
- Premises processing/repackaging area has been granted health approval to operate by previous inspector.
- Self closing door on washroom opening into processing area and light covers in place over processing area still in place.
- All boxes and bags of food in the premises stored off the ground on pallets.
- All foods appear to be from approved sources.
- Did not note any cardboard boxes being used as counter space at the cash register areas.
- Upstairs is an office space. No food was stored in this area.
