Observation (CORRECTED DURING INSPECTION): Dishwasher malfunctioning. Dishwasher not achieving final sanitizing rinse of greater than or equal to 50ppm Chlorine at the dish. CORRECTED DURING INSPECTION - all dishes, tongs, scissors, chopsticks, utensils, etc. were sanitized for 2 minutes in 200ppm Chlorine sanitizer during inspection. (observed by Inspector)

Corrective Action(s): NOTE: This is not a long term solution. Facility has too many dishes and tables to manually sanitize all utensils and dishes.

OBTAIN TEST STRIPS. TEST DISHWASHER DAILY. Testing concentrations of sanitizer solution for dishwasher daily ensures dishes are properly sanitized between uses.

Observation: One of the back handsinks (the one next to the door) has a broken faucet. The hot water faucet has electrical tape on it and it is not functional.

Use other 2 handsinks until handsink is repaired.

Observation: Dishwasher is malfunctioning. Dishwasher not providing final sanitizing rinse of dishes at end of cycle. The sanitizing dispenser is not rotating during cycle and is therefore not dispensing sanitizer into the final cycle. The final sanitizing rinse is measuring 0ppm Chlorine solution after multiple cycles.

- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Two functional sink plugs available for use
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Proper thawing techniques observed
- Ice machine and scoop in good sanitary condition
- Proper re-heating methods observed for previously cooked food items
- Recording of time tracked food items occurring for cold dishes in salad bar for both lunch and evening. NOTE: Facility does not need to keep more than one month's records for Health Department. Facility currently has records since July on site.

NOTE: current method of manually sanitizing of all dishes and utensils is TEMPORARY for lunch rush only. Facility is too large to sanitize dishes manually for dinner service. Health inspector to return by 4pm for follow up inspection.
