Observation: REPEATED VIOLATION
Rodent droppings observed in the following areas:
- Under the shelving units in the back kitchen
Operator stated that due to shortage of staff last month, he did not conduct frequent cleaning.
Corrective Action(s): - Please remove rodent droppings from the above mentioned area and disinfect the area with 1 part bleach to 9 part water solution. Use proper PPE during cleaning.
- Regularly clean the facility and monitor for any new rodent activity.
- Notify your pest control company to implement appropriate control measures.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. One of the kitchen range hood filter was missing at the time of inspection. Operator stated that it broke during cleaning.
2. Hand wash sink in the front has leakage issues. Operator stated that he spoke with plumber and was advised to replace the whole handwash sink.
Corrective Action(s): 1. Please install a kitchen hood new hood filter in the open space to prevent build up of grease in the ducts.
2. Please service the handwash sink.

Comments

Routine inspection conducted.

Observations:
- Temperature of freezers noted at or below -18C
- Walk in cooler at 4C
- Prep cooler at 2C
- Hot holding unit recorded above 60C.
- Front display cooler for sweets at 2C.
- Hand wash sink in the back kitchen was equipped with hot and cold running water, liquid soap and single use paper towels.
- 50ppm chlorine residual noted during rinse cycle of low temp mechanical dishwasher.
- 200ppm bleach solution was available in sanitizer pail.
- Food storage practices were satisfactory.
- Operator has valid FOODSAFE Level 1.
- Operator stated that the door of prep cooler has been replaced but it was still loose. It is recommended to put a sign on prep cooler to remind staff to close it properly.

Please notify your district EHO once the clean up has been conducted and both equipment (handwash sink & kitchen hood) have been serviced.
