Comments

The pastry display cooler continues to operate at elevated temperatures. The 'sample food products' on display measure 8 to 10 C. It has been determined that the original steel wire shelving was replaced by wood shelves a few months ago, and the steel shelves were put into storage at that time. The wood shelves are impeding air-flow inside the cooler and the required refrigeration temperatures are not being maintained. The wood shelves must be replaced by the original steel shelves so that product may be put on display-for-sale once again.
