Observation (CORRECTED DURING INSPECTION): Ensure all on-food items are located away from food contact surfaces / food items. Dust pas was found on shelf next to boards / trays used for cake prep. Operator removed item immediately during the inspection.

Observation: Pest control to be set up for facility. Currently there is no pest infestations. *All holes or entry evidence of points should be blocked off to prevent entry of pests. (ie. under the sinks, oven area.) Send Environmental Health Officer copy of professional pest control comments / invoice.

Observation: Knives found to be located in knife block for storage. This can not be sanitized properly and can lead to the contamination of food. Ensure to install a magnet knife holder for the storage of clean knives.

- Handwashing station equipped with hot/cold running water, liquid soap & paper towels.
- 4 door cooler @ 3C & equipped w/ thermometer.
- Under the counter cooler @ 4C
- Display case in customer area @ 4C.
All equipped w/ thermometers.
- Freezer @ -19C.
- Note: no hold holding units available on site.
- Mop sink is separated from food prep area and used as per sanitation plan.
- Bleach water sanitizer @ > 100 ppm concentration. Sanitizer bucket is labelled properly.
*Ensure to keep rags inside sanitizer bucket. Dishwasher reached 79C @ dishlevel.
- All foods are located off the floor. Foods found to be located in containers with cover / lids, and are protected from contamination.
- Employees observed to have personal protective equipment (aprons).
*Recommendation: Ensure all employees have hair restrained wearing hairnets. in food prep area.
