General Comments:
As per sanitation procedures, when the cutting room is above 10 degC, equipment (including cutting boards) must be washed and sanitized every 4 hours. The temperature of the cutting room during the inspection was 9.6 degC. Staff are washing and sanitizing the equipment at the end of the night.
Coolers are below 4 degC
200ppm Quats is available for use
Handsinks in the meat cutting area and in the seafood area are both fully equipped
Discussed cleaning procedures. No concerns noted.
