Observation (CORRECTED DURING INSPECTION): Quats sanitizing solution in Alder had no detectable sanitizer.
Corrective Action(s): Quats sanitizer at 200ppm is required to properly sanitize food contact surfaces. Sanitizer bottle was emptied and refilled with sanitizer at the time of inspection.

Comments

-Facility has nine serving kitchens – eight are currently in use. Birch, Alder, and Cedar were inspected. Food is prepared in the main kitchen and is transported to the serving kitchens.

Main Kitchen:
-Both walk-in coolers were at 4C.
-Walk-in freezer was at -18C.
-Upright freezer was at -22C.
-Hot holding was greater than 60C. Foods were cooked to greater than 74C and hot holding units were functioning properly prior to use for storage of hot foods.
-Temperatures are checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 73C on the dish surface (minimum of 71C required for proper sanitizing).
-Pot washer rinse water was at 72C.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser was at 200ppm.
-Quats sanitizer spray bottle properly labelled and tested at 200ppm.
-Slicer was found to be clean and sanitary. Slicer is properly disassembled for cleaning and sanitizing.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered.
-Canned food items were found to be in good condition. Dents cans are removed from the kitchen upon receiving.
-General sanitation satisfactory at the time of inspection. Additional cleaning required in the shelving units in the walk-in cooler.
-Facility is serviced by a professional pest control operator every two weeks. No signs of pests noted at the time of inspection. A few of the snap traps have been set off. Ensure traps are reset to allow for proper monitoring.
-FoodSafe Level 1 valid until Oct 10, 2022.

Serving Kitchen:
-Foods are brought up to the serving kitchen during meal service and are removed immediately after service.
-Refrigeration units were at 4C or less.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Temperatures checked and recorded daily. A few occasions were observed where corrective actions are not documented (Birch and Cedar) and a couple temperature checks were not recorded (Cedar).
