Observation (CORRECTED DURING INSPECTION): - About 20 half cooked chicken leg skewers observed placed in the sink for chilling process. The sink was not in a sanitary condition. Temperature measured at 25C and the chilling time was about 20 minutes.
Corrective Action(s): - Removed chicken skewers into clean trays and properly covered to prevent contamination, and then placed in walk in cooler to contiunue the cjhilling process.
- Thoroughly cleaned and sanitized the sink.

Observation (CORRECTED DURING INSPECTION): - Staff did not wash hands before and after handling food.

Observation (CORRECTED DURING INSPECTION): - Multiple food containers and layered storage shelving units without proper cover in the coolers.
Corrective Action(s): - Food containers need to be properly covered to prevent contamination.
- Place an empty tray on the top of the layered shelving units to protect food from contamination.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: - Back door observed kept open. There was big gap on the bottom of the door.
- Sticky traps in the kitchen observed full of flies.
Corrective Action(s): - Ace pest control company was the contractor. No comments or recommendation given to the operator about pest control. Please request Ace to recap with the operator/ owner after each service.
- Seal the door to prevent rodent entry.
- Replace sticky traps in the kitchen.
- Keep the kitchen in a sanitary condition.

Observation: - Heavy grease built up on the floor underneath the equipment in the cookline.
- Heavy food debris built up on the appliances such as onion slicer, bread machine, can opener.
- Unused items and food debris built up on the food prep table.
Corrective Action(s): - Keep the food processing area in a sanitary condition to prevent foodborne illness, pest infestation.

Routine inspection conducted with the presence of 6 kitchen staff.

- Hand wash sink fully equipped with hand soap, paper towel and hot/cold running water.
- Walk in cooler 1.2C; food prep cooler under the counter compartment measured 4C.
- Low temperature dishwasher tested 50ppm at the end of the cycle. Bleach solution in the buckets tested 100ppm for surface sanitation use. Encouraged staff to effectively sanitize all the food contact surfaces before and after food processing.
- Chest freezers kept below -18C.
