Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwasher is not working and repair has been called. Quats dispenser is dispensing 10ppm only.
Correction: Correction order issued. Please repair the dishwasher so it dispenses at least 50ppm chlorine and the sanitizer dispenser so it dispenses 200ppm Quats. Bleach onsite is set up for manual warewashing of cooking utensils and equipment only. 100ppm chlorine sanitizer mixed onsite in new spray bottle for immediate use. Have all requirements on Correction Order completed ASAP.

Dishwasher repaired, water able to be dispensed into the unit and 75ppm chlorine was measured at plate.
Service report provided, photo taken onsite. Extra chlorine test strips obtained as well and are in use.
Restaurant will now use bleach sanitizer instead of Quats. Proper warewashing setup at two compartment sinks. Remember to buy non scented bleach.
Labelled spray bottles had 100ppm bleach sanitizer.
General floor sanitation improved, mice droppings still noted in some spots. Identified noted areas to operator. Continue to monitor pest activity by cleaning and use a flashlight to check.
Discussed with operator to properly place the traps, close doors after delivery (add sign on door to reminder deliveries) and keep food in rodent proof containers.
Mice droppings still remain on the floor only.
If unable to reduce droppings, operator will get professional pest control company.
Exhaust hood also serviced (Aug 2020).
Lamb kept at >80C and rice over 60C on the stove at time of inspection.
