A follow-up inspection was completed:
- High temperature dishwasher had a rinse cycle temperature of 74C at the plate's surface, as per max/min thermometer.
- Dishwasher can be used to wash and sanitize dishes. Manual ware washing and sanitizing is not needed.
- Washable dishware can be used to serve food on.
- The waste pipe, under the hand sink in the back prep area, is clean and there no longer is accumulated grease on it.
- The exhaust canopy and filters, above the flat grill, have been cleaned and there is no accumulation of grease on it.
- All violations have been corrected. Good work.
- All in order.
