306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Accumulation of flour found on the floor under the large wooden prep table; on the walk-in-freezer floor beneath racks; on the outside of food containers and lids; and on the legs of tables, equipment, and shelving racks. The flour will attract pests and rodents.
Corrective Action(s):
Clean the mentioned areas more frequently to prevent the accumulation of food.
- Floor under the large wooden prep table MUST be swept daily and mopped at least weekly.
- Walk-in-freezer floor MUST be swept at least weekly. Move racks away from walls so the floor underneath can be cleaned.
- Outside of food containers and lids MUST be swept daily, and washed at least weekly.
- Legs of tables, equipment, & shelving racks MUST be swept daily, and washed at least weekly.

Observation (CORRECTED DURING INSPECTION):
Rodent bait/poison being used inside the food premises. Rodent bait is unsafe to use inside a food premises, as the bait could be spread to food surfaces via rodent feet & hands when they touch it.
Corrective Action(s):
Immediately stop using rodent bait/poison inside the food premises. Immediately place the secured bait box outside the back door. During the inspection, the owner moved the bait box outside.

Comments

A routine inspection was completed:
- Front display cooler is 4C; retail cooler is 4C; chest freezers in front service area is -17C or colder; walk-in-cooler is 4C; walk-in-freezer is -21C; coolers in back production area was 4C; and thermometers present.
- Food production starts at midnight and occurs throughout the day until ~ 3:30pm. The premises closes at 6pm.
- Hand sink in front service area and staff washroom had liquid soap, paper towels, and running hot and cold water.
- 2-comp warewashing sink had running hot and cold water; drain plugs; dish soap; and bleach for sanitizing.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with proteins separate or below RTE foods; and foods stored 6" of the floor on racks and shelves.
- No expired foods in use of for sale. FIFO rules being followed.
- General sanitation level satisfactory. Improvement needed in the mentioned areas.
- A designated cleaning staff arrives every day and cleans from 3:30pm-6pm. On Saturday, deep cleaning of machines and floors are being done.
- No signs of pests. Owner has blocked all openings and holes in walls; placed snap traps throughout the premises; and doors close tightly.
- Valid FoodSafe certified staff present, or they possess an equivalent, recognized certificate.
- Valid health permit and decal posted.

ACTION
Sweep the floor under the wooden prep table EVERY night. Move all buckets and other items from under the prep table before sweeping.
Clean the exterior surface of food containers and lids at least once a week.
Clean the legs of equipment, tables, and racks at least once a week.
Clean the floor of the walk-in-freezer under all racks. Move racks away from walls to achieve this.
Stop using rodent bait inside the premises. Immediately move the bait and secured bait station outside. Only use mechanical means of monitoring and trapping pests.
