Observation (CORRECTED DURING INSPECTION): Raw meats, cheeses, deli meats and seafood stored in the drawer cooler and small sandwich cooler were measured with internal temperatures of 7C-9C.
Corrective Action(s): Staff move the aforementioned foods into the walk-in cooler and stand-up freezer. Cold potentially food must be stored at 4C or less.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Cheese corn and mashed potatoes in approximate 1L inserts were hot held at 54C. Staff stated they were held for more than 2 hours.
Corrective Action(s): Aforementioned foods were discarded by staff and temperature on the hot holding unit was increase to 150F from 135F. Ensure hot potentially hazardous food is hot held at 60C or above.

Observation: Small amount of rodent droppings noted at the following areas:
- Under the counter at the front preparation area.
- Under the counter at the bar area.
Corrective Action(s): Clean the aforementioned areas and remove rodent droppings. Continue to monitor for rodent activities and follow recommendation from professional pest control if required.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The following coolers were not able to maintain temperature at 4C or less:
- Small sandwich cooler measured at 8C.
- Drawer cooler measured at 8.5C.
- Front half of the walk-in cooler at 7C.
Corrective Action(s): Service all aforementioned coolers to ensure ambient temperature can be maintained at 4C or less. Do not use these cooler for potentially hazardous food until then. Correct by: Jun 17, 2024.

Routine inspection:
- Stand-up and chest freezers were functional.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quaternary ammonium sanitizer available in spray bottles and from the dispenser.
- Low temperature dishwasher in the kitchen dispensed 50 ppm chlorine sanitizer at the plate level.
- Low temperature dishwasher in the bar area dispensed 200 ppm chlorine sanitizer at the plate level.
- Glass washer dispensed 25 ppm iodine sanitizer.
- Food products stored off the ground and organized.
- Ice machine maintained in sanitary conditions.
- General sanitation satisfactory.
