1. Place bag of onions in a container or designated shelf so that it is off the floor.
2. Cover all food items with a food-grade cover/lid.

Newspaper used to cover cheese container in walk-in cooler.
Corrective Action(s):
Remove newspaper as it is not a food-grade cover. Ensure all food products are covered only with a food-grade material/cover/lid.

Both bleach sanitizer spray bottles unlabeled.

Observation:
Light fixture above chest freezer does not have a cover.
Corrective Action(s):
Place a shatter proof cover on the light fixture to prevent a physical injury/contamination. To be corrected in 2 weeks.

Routine Inspection:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
***Remember that a Standing Correction Order for hot water at the hand washing station is still in effect from previous inspections. If hot water is found to be turned off in any future inspections, a violation ticked will be issued.***
- All temperatures met health requirements:
Walk-in cooler and prep cooler maintained at 4 degrees Celsius.
Chest freezer and stand-up freezer maintained below -18 degrees Celsius.
Hot holding for pizza maintained at 60 degrees Celsius. Pizza slices have high turn over and are gone within an hour.
- No signs of pest activity at the time of inspection.
All traps checked - no rodents present.
Pest control comes in monthly.
- Bleach sanitizer in both spray bottles = 200 ppm.
