Observation (CORRECTED DURING INSPECTION): Display cooler measured at 11 C. Probed salsa and several sandwiches and temperatures similar.
Corrective Action(s): A) Discard all pre-made sandwiches stored in this unit. Done.
B) Do not store any potentially hazardous foods in this unit.
C) Any sandwiches on display must clearly be labelled as "display only".
D) All sandwiches must be date labelled with "made on" date.
E) Pre-made sandwiches, and ingredients for sandwiches must be stored in only functional cooling unit located in the back of premises.
The above will be reviewed on follow up inspection date noted on report.

*This premises now has only one functional cooling unit and this unit will be under added workload. Continue to maintain temp logs of existing cooling unit. The current practice of recording temperatures three times a day is acceptable.
** Consider fixing or replacing the prep cooler to improve sandwich-making logistics and spread out food storage, as well as having a back up for emergencies.
