Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Automatic quat dispensing mechanism at the 3 compartment sink is not dispensing the correct amount of quat sanitizer. Sanitizer dispensed tested at approx. 100ppm. Must be a minimum of 200ppm
Correction: Until technician has come in to repair the unit , add concenttrated quat sanitizer to the sanitizing sink by hand. Use the quat test strips to verify that a minimum of 200ppm quat is present.
Premises is to resanitize all utensils.
