Observation: Top rolling rack of pizza oven has large buildup of debris around the sides of the rack and on the roller.
Corrective Action(s): Clean the debris and keep your oven racks maintained in sanitary condition.

Observation: 1) Large upright cooler in the kitchen corner that is not functional is being used to store papers/files. Remove this item from your kitchen to facilitate cleaning .
2) Items not needed in dishwashing area stored above sink: old square panels made from a carboard-type material, pliers, old utensils, etc.
Corrective Action(s): Remove the above mentioned items and whatever other items not needed for your kitchen. This will help to improve organization in your kitchen and facilitate cleaning/sanitation.

Walk in cooler at 3.2 deg C
Chest freezer: -18 deg C (in need of defrost)
Upright freezer: -19 deg C
Prep cooler not in use at time of inspection
Hot holding unit was at 66 deg C (used for pizza slices)
3 compartment sink in back room with bleach available to sanitize (keep bleach underneath your 3 compartment sink for ease of access)
No signs of pests at time of inspection
Operator was on site and has renewed his FoodSafe.

Follow up inspection to be conducted to verify:
1) Cleaning of pizza racks is done
2) Unnecessary items removed from kitchen
3) Staff member also has FoodSafe level 1
