Observation:
- Debris build up observed inside the ice machine.
Correction:
- Clean & sanitize after turning off the ice machine and all ice have been removed.

Comments

- Ice machine has been cleaned.
- Prep cooler has been replaced and the temperature is maintained at 4C or below. Operator showed temperature logging system that has been newly implemented - good.
- Caulking has been done by the operator around the dishwashing sink - there are still signs of mould observed where the silicone is applied. Ensure to thoroughly clean the wall and remove any mould/debris build up before having the caulking done. Caulking should be done by a professional technician to ensure surface is even, smooth and easy to clean.
