- Hot held beans observed at 36C.

- Beans were reheated in the oven at the time of inspection. Ensure to reheat all items to be hot held to 74C internal temperature before moving them to hot holding compartment.

- Operator stated the solution inside a spray bottle labelled " SANITIZER " is not sanitizer.

Comments

- All handsinks are fully equipped with hot and cold running water, liquid soap and paper towels in dispensers.
- All coolers at 4C or below.
- Stand-up freezer at -18C or below.
- Hot held items (except refried beans - note violation coded above) at 60C or below.
- 3 compartment sink manual dishwashing method in practice.
- Sanitizer measured at 200ppm QUAT from the red bucket and from the 3rd sink.
- Pest control report dated Dec 15, 2022 from APNA Pest control indicates no pest activity. No signs of pest were observed at the time of inspection.
- Back door was open at the time of inspection because delivery was taking place. Ensure to keep door closed after the delivery is done.

*Operator Foodsafe level 1 is expired in Dec 2022. Ensure to obtain a new certificate.
