- Bleach sanitizer in white bucket measured at 100ppm.
- Ice machine in sanitary condition.
- No signs of pest observed. *Replace old glue boards. Install some extra glue traps in the kitchen for monitoring.
- 3 compartment sink available with drain plugs - manual dishwashing procedure was reviewed with the staff on site. Staff should be able to demonstrate this method. Ensure all kitchen staff is educated on 3 compartment manual dishwashing method.
