Observation (CORRECTED DURING INSPECTION): Fried onion was found at 30 oC beside the grill???
Corrective Action(s): Temp abused fried onion (risk of C. Bot) to be discarded- keep fried onion either cold at <4 oC or hot >60 oC at all time.

Observation (CORRECTED DURING INSPECTION): Noted dirty wiping rags on counters (picture taken), this is a critical violation (ticketable offense).
Corrective Action(s): Wiping rags must be rinsed stored in a bucket of sanitizer at all time

Observation: No sanitizer detected at final rinse at dishwasher- sanitizer bucket was very low- bucket is changed and still no sanitizer detected at final rinse. Operator called the dishwasher company to come.
Corrective Action(s): Repair so at least 50 ppm chlorine to be detected at final rinse- manually sanitize all already washed dishware by soaking in a sanitizer solution (bleach 100 ppm or quats 250 ppm for 2 minutes -let air dry)
