Observation: 1. An opened can of pineapple noted stored in the reach-in cooler. As per operator, this was opened yesterday.
2. 2 spray bottles of bleach sanitizer solution was prepared. One was noted with 200 PPM chlorine residual whereas the other had over 200 PPM chlorine residual (test strip bleached out).
Corrective Action(s): 1. Use up all the pineapple or transfer into a food-grade container. Transfer any leftover food from cans (especially acidic food) into a food-grade container after opening to avoid the leaching of chemicals from the can into food.

2. **Issue corrected during the inspection** The bleach sanitizer spray bottle was diluted during the inspection. 200 PPM chlorine residual now detected.

Routine inspection conducted today:
Handwash station, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were holding food at 4C or below.
All freezer units were holding food at -18C or below.
Excellent storage hierarchy and food were noted being stored protected.
No food was being hot held during the inspection.
Proper dispensers (with handles) used and stored within bulk food containers - handles were not observed in contact with food.
High temperature dish machine was able to reach 71.0C at the plate level during the rinse cycle.
No pest activities noted during the inspection.
Excellent sanitary condition noted - especially along the cookline - great job at maintaining the cleanliness since the last routine inspection.
Operator (onsite at the time of inspection) still has a valid FOODSAFE level 1 certificate - expires Feb 16, 2024

Reminder that any cold potentially hazardous food (including chopped vegetables, bean sprouts, etc.) left out for food preparation during the lunch rush must be returned to a functioning cooler unit within 2 hours or discarded.
