Observation (CORRECTED DURING INSPECTION): Hand sink beside office was inaccessible. A pallet storing cardboard was placed in front of this hand sink.
Corrective Action(s): All designated hand washing stations must be easily accessible at all times. Do not block access to sinks.

Observation: - Floor in "wet storage" area beside walk-in freezer requires cleaning.
- Large equipment bases require cleaning and sanitizing - accumulated flour/dough debris on and around bases of equipment (For clean in place equipment)
Corrective Action(s): - Clean all areas noted above, and do so on a regular basis.

Observation: - Hole in wall beside bread slicer at front retail area has still not been repaired.

Comments

- Facility was in the middle of a large production order at time of inspection. Equipment was in use (and not cleaned for the day yet) - OK. Ensure equipment coming into contact with food products is cleaned at the end of each day.
- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Bleach available for sanitizing
- 3-compartment sink and surrounding area was maintained in sanitary conditions
- Walk-in freezer was below -18C
- Walk-in cooler was below 4C
- General sanitation satisfactory at time of inspection
- No signs of pest activity noted at time of inspection

Reminder: Ensure shelves for storing bread are maintained in good condition (not broken or splintering in areas) and properly sealed.

Note: Working order is already in place for many of the issues noted above.
