Routine inspection conducted.
Main Kitchen:
- Hand washing stations fully supplied with soap and paper towels in dispenser.
- Walk in coolers measured at or below 4 degree C. Thermometers noted. Shelve organized and clean.
- Walk in freezer measured at or below -18C.
- All reach in coolers measured at 4C or colder. Reach in freezer measured at -18 C or colder.
- Hot holding carts to transfer food to floors measured above 60C.
- QUAT 200 ppm available in sani buckets. Wiping cloths are to be stored in sanitizer. Sanitizer is to be refreshed when needed. Practices discussed with staff and manager.
- Dish washer registered at 70C. Ensure to monitor and test final rinse water temperature. Final rinse water must be minimum 71C at dish surface.
- General sanitation is excellent.
- Floor noted clean and maintained. No build up noted on floors.
- Ice maker kept clean and ice scoop noted stored out of ice bin. Ensure to keep in a sanitary container.
- Dry storage well organized, well lit and no sign of pest activity noted at this date.
- Hood range exhaust vents maintained clean. No grease or build ups noted at this date.
- Staff noted with clean clothing and hair control.

Overall operation, sanitation and maintenance is satisfactory.
Note: Different floors have kitchenettes built but not in use at the moment. Only refrigerators used to store ready to eat food. Temperatures monitored twice daily.
