Observation: New high temperature commercial dishwasher has been installed. The internal temperature of the dishwasher is not reaching 71 C / 160 F as measured inside of the machine although the booster appears to be set at 88C.
Corrective Action(s): Continue to sanitize dishes and utensils manually (using 100ppm chlorine rinse for 2 minutes after they are washed and rinsed).
Check the instructions for the new dishwasher and make sure that the internal temperature of the dishwasher reaches 71 C. Temperature strip given to verify. Once the machine can provide 71 C final hot water rinse (inside the machine), then you can use it to sanitize. Be aware of proper maintenance and use of this machine.

Comments

The top of the work table beside the pizza oven has been resurfaced (stainless steel) and is now in very good condition and can be kept clean.
Wash, rinse, sanitize, and air dry all work tables, utensils every 4 hours or more often.
Chorine sanitizer (in spray bottle) is available to sanitize counters and clean in place equipment.
Hand washing station has liquid soap and hand dryer. Ok. Paper towels are available also.
Walk in and prep coolers are both at <4 C/40 F - good.
Reviewed procedures for chicken wings. These must be cooked to 74 C.
