Observation (CORRECTED DURING INSPECTION): Pies were at a temperature of approximately 7C at time of inspection. They were prepared this morning.
Corrective Action(s): Pies were transferred to the walk-in cooler. Do not use the display cooler for any potentially hazardous foods until it can consistently maintain 4C or less. Contact the Environmental Health Officer when the cooler has been adjusted or repaired.

Observation: Pie display cooler (left compartment) fluctuated between 5-7C throughout the course of the inspection.
Corrective Action(s): Contents of pie display cooler transferred to walk-in cooler. Repair or adjust the display cooler until it can reach an ambient temperature of 4C or less, consistently.

Comments

Routine inspection conducted. Facility is well-lit, well-maintained and in excellent sanitary condition. The following observations were noted:

1. Temperatures
- Walk-in cooler (accessible from rear hallway) at -2C
- Retail display stand-up coolers at 4C or less
- Kitchen undercounter cooler unit at 4C
- Pie display cooler at _ C
- Stand-up retail freezer unit at -15C
- Walk-in freezer unit (accessible from kitchen) at -16C
- Chest freezer unit at -28C
- Pies that were recently baked were at a temperature of approximately 60C, on cooling rack in the kitchen. When the pies sufficiently cool, they will be placed in the walk-in freezer for rapid cooling
- Temperature logs maintained and up-to-date

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach sanitizer spray bottle (x2) at 200 ppm chlorine residual
- 3-compartment sink available, drain plugs operational
- Meat grinding equipment and bandsaw was in good sanitary condition inside the walk-in cooler
- Utensils / ladles/ scoops stored in cabinets were in good sanitary condition

3. Storage
- Food products generally stored at least 6" off the floor
- All dry products are inside food-grade bins or in containers with tight-fitting lids
- Chemicals stored in designated storage area
- Bulk storage area in sanitary condition. Candies and dried goods are dispensed via gravity feed. Ensure that they are sanitized after they are emptied (before adding a new batch)

4. Pests
- No evidence of recent, visible pest activity at time of inspection

5. Administrative
- Permit posted and up-to-date
- Employees have valid FoodSafe 1
