Observation: Back area storage, inside walk in cooler and other areas have debris and clutter. Garbage disposal area requires cleaning especially underneath the grease trap container.
Corrective Action(s): Clean areas in the back thoroughly and on a regular basis. Remove clutter and empty boxes in the cooler and storage areas. Storage area and prep areas are tight for space so it is important to be organized. Garbage area requires thoroughly cleaning to remove grease build up on the floor.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: One prep line cooler is not being used but it in the work order list. Another cooler needs to be serviced as well to ensure it is maintaining 4 deg C or colder.
Corrective Action(s): These prep line cooler must be in good working order (at or below 4 deg C). Coolers are scheduled to be serviced today.

Comments

Hand sinks supplied with liquid soap and paper towels.
Wiping cloths stored in bucket of sanitizing solution (100 ppm chlorine).
3 comp sink sanitizer had 200 ppm Quats.
Low temp. dishwasher had 100 ppm chlorine residual.
Walk-in coolers were at 3-4 deg C.
Walk-in freezer was at -18 deg C or colder.
Line freezer was at -14 deg C.
Line coolers were at 3-5 deg C.
Hot holding for eggs, sausage, muffins, bagels were at 60 deg C or hotter.
Temperature log was available and up to date.
Dining room area were clean and regularly maintained.
Staff washroom and public washrooms were in sanitary condition.
