Observation (CORRECTED DURING INSPECTION): Front display cooler measured at an ambient temperature of 12 degrees C. Internal temperature of food product measured 7 degrees C. It was stated by staff that cooler power cord was accidentally removed from power outlet recently.
Corrective Action(s): Potentially hazardous beverages and desserts relocated to another cooler at 4 degrees C or less. Ensure that cooler is capable of maintaining potentially hazardous foods at 4 degrees C or less. Ensure that power cord is secured if it is loose.

Observation: Mildew/mould observed on bottom edge of inner panel located within ice machine.

Observation (CORRECTED DURING INSPECTION): 1. High temperature dishwasher measured a maximum temperature of 55 degrees C after three cycles.
2. Less than 100 ppm quaternary ammonium compounds (quats) sanitizer detected in sanitizer containers with wiping cloths. Solution appeared soiled.
Corrective Action(s): 1. Ensure dishwasher is capable of reaching a minimum of 71 degrees C at the utensil surface during the final rinse for effective sanitizing. Dishes to be sanitized manually with 200 ppm quaternary ammonium compounds (set up at time of inspection). Allow dishes to be in contact with sanitizer for two minutes, then allow to air dry. Only single use dishes/utensils are permitted to be used for customers at this time.
2. Solution changed and measured at 200 ppm quats. Ensure that sanitizer is maintained at concentrations required for effective sanitizing of food contact surfaces (e.g. 200 ppm quats).

Observation (CORRECTED DURING INSPECTION): Two paper bags of flour stored directly on floor.
Corrective Action(s): Bags removed from floor. Ensure that all food is stored off the floor to protect from potential contamination and to allow for cleaning.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. High temperature dishwasher reached a maximum temperature of 55 degrees C at the utensil surface (measured for three cycles). High temperature dishwasher was observed to be non-operable for approximately 15 minutes between cycles. Note: Technician arrived on site during inspection.
2. A small amount of water was observed to be leaking around faucet located at back hand sink.
3. Back hand washing station paper towel dispenser not functional. Paper towel located outside of dispenser at beginning of inspection.
Corrective Action(s): 1. Ensure that high temperature dishwasher is capable of effectively sanitizing dishes. Minimum sanitizing temperature: 71 degrees C at the utensil surface (minimum 82 degrees C at the rinse manifold). Ensure dishwasher is functioning properly (no lag between cycles). Date to be corrected by: Today.
2. Ensure that leaks are repaired. Date to be corrected by: February 4, 2019.
3. Ensure that a functional paper towel dispenser is in place. Date to be corrected by: February 2, 2019.

Observation (CORRECTED DURING INSPECTION): A spray bottle labeled "sanitizer (contains bleach)" was observed to contain an orange-coloured liquid (same colour as multi purpose cleaner). No sanitizer detected.
Corrective Action(s): Bottle emptied. Ensure that all cleaning/sanitizing chemicals and similar agents are properly labeled to identify contents to prevent accidental mixing or misuse.
