Observation (CORRECTED DURING INSPECTION): Alfalfa sprouts were observed at about 15 degrees C inside the container near the front servery area.
Corrective Action(s): The alfalfa sprouts were transferred into the walk-in-cooler. Cold potentially hazardous food must be stored and/or displayed at 4 degrees C or less. If a small amount of food is kept out at room temperature, food temperatures must be monitored closely, the food must be transferred into a cooler below 4 degrees C after 2 hours, discarded after 4 hours, and this must be documented.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Dishware was not properly washed and sanitized as the high temperature dishwasher was not reaching 71 degrees or higher at the plate after the dishwasher final rinse at the time of inspection.
Corrective Action(s): Dishware was resanitized in 100 ppm chlorine sanitizer in the 2-compartment sink at the time of inspection. Staff were washing soiled dishes through the dishwasher and then sanitizing them manually in 100 ppm chlorine sanitizer.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: 1. Dishwasher was not reaching 71 degrees C at the plate after the dishwasher final rinse.
2. Lemon scented bleach was available on-site. Note: Unscented bleach was also available and was used upon verbal direction by the area E.H.O. to set up 100 ppm chlorine sanitizer.
Corrective Action(s): 1. Repair/re-service the dishwasher so that the dishwasher final rinse temperature is at least 71 degrees C at the plate.
2. Do not use the lemon scented bleach to sanitize any food contact surfaces.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Garbage bags were being used to cover meat in the walk-in-cooler. Cloth towels were being used to cover vegetables in food containers.
2. An ice scoop was stored directly inside the ice machine.
3. Knives were stored in a hard-to-clean area in the gap near the prep. cooler.
Corrective Action(s): 1. The garbage bags and cloth towels were removed during the inspection. Ensure food is covered in FOOD GRADE MATERIALS (e.g. saran wrap and/or food grade lids). Do not use garbage bags as they may be chemically treated with odour-suppressing chemicals, do not use cloth towels as they may accumulate debris, and do not use newspapers/cardboard either.
2. The ice scoop was stored in a clean container separately from the ice.
3. Knives were rewashed and sanitized. Store them in a clean container, surface, and/or magnetic strip.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The temperature digital reading of the dishwasher was not in good working order as the final rinse temperature could not be monitored.
Corrective Action(s): Either repair the final rinse temperature readout to monitor that the final rinse temperature at the manifold is at least 82 degrees C OR obtain a waterproof probe thermometer to monitor that the dishwasher final rinse temperature is at least 71 degrees C at the plate. Correct within 1 week.

Observation: A light cover is missing from the ceiling in the kitchen.
Corrective Action(s): Replace the missing light cover; Correct in 2 months time.

Walk-in-cooler and other coolers were 4 degrees C or less.
Freezers were -18 degrees C or less.
A probe thermometer was available.
100 ppm chlorine sanitizer was available in the bucket with a wiping cloth.
Ice machine was in a clean condition.
No signs of recent pest activity at the time of inspection.
