Inspection report: 255256 Met with Peter ( Assistant director ) and Scott ( kitchen Manager ). FS lev 1 trained staff - at least two per shift available FS plan- please update your food safety plan as required Sanitation plan - quat measured at 200ppm ( please ensure to provide a test strips for daily monitoring of concentration ) Daily cleaning schedules - procedure /in place - for weekly /seasonal to be addressed New high temp dishwasher - installed. Final rinse reached 71C at the plate surface.
