During time of follow up, high temperature dishwasher reading was:
165F - wash
200F- rinse

High temperature dishwasher reached adequate sanitization temperatures via hot water (73.3C) at the plate.
Note: Operator must ensure that ALL staff know that this dishwasher takes 1 -1.5hr to warm up to temperature and no warewashing can occur in dishwasher until it warms up to temperature.
