Observation: Rodent droppings and shredded paper found in the following areas;
-in the small storage room under the shelves (closest to the hot water tank)
-in the large storage room under tables and in the corners of the room
-behind the glasswasher
Corrective Action(s): Clean the above noted areas on a more frequent basis. Follow all recommendations of the pest control company.

Observation: Handsink at the dough mixer is broken (hot water knob is not working)
Corrective Action(s): repair the handsink and ensure that it is always stocked with liquid soap, paper towels, and hot/cold running water.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: 3 staff on site at the time of inspection, none of them had completed FOODSAFE level 1 certification.
Corrective Action(s): ensure that minimum 1 staff member with FOODSAFE level 1 certification is on site during all hours of operations. Certificates must be available for inspection at all times.

=Front counter handwash station stocked with liquid soap, paper towels, and hot/cold running water
=Walk-in cooler (3C) and pizza prep cooler (4C) measured < 4 degrees C
=Upright freezer (-20C) and undercounter freezer (-28C) measured < -18 degrees C
=High temperature dishwasher had a final rinse temperature of 75.4 C at the dish surface (minimum 71 C required for proper sanitizing)
=Low temperature glasswasher measured 25 ppm iodine at the glass surface
=Wiping cloths stored in bleach sanitizer solution at 100 ppm chlorine =General sanitation was satisfactory at the time of inspection
=General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered and raw meats stored below ready-to-eat foods.
=Ice machine (not in use) and deli slicer maintained in a sanitary manner, staff hygiene satisfactory at the time of inspection

note: facility participates in 2good2go. Discussed with operator that pizzas must be cooled rapidly once taken off of the room temperature holding (pizzas held for 45mins) and placed into marked boxes.
