Observation: Hand washing station by the fryer lacks cold water and paper towels. This station is not functional as the water is too hot to hand wash and there is no paper towels.
Corrective Action(s): Repair hand wash station faucet to provide hot and cold running water. Ensure paper towel dispenser is stock with single use paper towels. If the dispenser is not functional, replace or repair.
Meanwhile until hand washing station repaired, wash hands over 2 comp sink. Ensure to remove gloves and wash hands after handling money or between different tasks. Single use gloves are to be discarded after use. DO not reuse them.

Important note: Hand washing: See notes above. A follow up inspection scheduled for Feb 28th, 2024.

- Coolers measured at or below 4C. Keeping chopped onion and chopped green onion in fridges discussed.
- Upright freezer measured at or below -18C.
- Gravy in hot holding unit measured at or above 60C. also toppings in inserts measured at 72C. (Hot food must be kept at or above 60C)
- Mechanical dishwasher registered at minimum 71C at the final rinse water.
- Dry storage maintained.

General cleaning is overall satisfactory:
- Fryer hood noted clean.
- Floor noted clean and maintained. Back storage noted clean. Dining are kept clean.
- Counters and cutting boards noted clean and in good working order.
- No sign of pest activity noted at this date.
Note: Mop bucket noted stored with dirty water in the bucket. This may be a source for pest such as drain flies, mice etc. Please ensure to store the bucket empty and mop washed before storage.

Bleach water sanitizer available in a bucket. Please ensure to sanitize cutting boards and counter tops.
One staff has Valid Food Safe Training.
