Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottles contained no detectable QUATS. There was no sanitizer in the food preparation areas.
Corrective Action(s): The bottles were refilled at the time of inspection and were tested to contain 200 ppm QUATS. Ensure sanitizer bottles are refilled timely as sanitizer dissipates over time.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Two hand sinks were fully blocked in the food preparation areas. One was blocked with a tray of cooked meat and the other was blocked with utensils and pots.
Corrective Action(s): The sinks were cleared at the time of inspection. Ensure hand sinks are clear of obstruction to promote frequent hand washing.

Observation: Two boxes of lettuce and cauliflower were kept on the floor in the food preparation area.
Corrective Action(s): Boxes were moved to shelves at the time of inspection. Do not store food on the floor.

Comments

Routine inspection conducted. Facility will be expanding into the next unit before April. Please submit new floor plans immediately.

Temperatures:
Coolers were maintaining 4 degrees Celsius or less.
Freezers were maintaining less than -18 degrees Celsius.
NOTE: Maintain temperature logs regularly.

Sanitation:
All hand sinks were stocked with hot and cold running water, liquid soap, and paper towels. *see violation above
General sanitation is satisfactory - deep clean is required. Accumulating food debris was noted around equipment, behind shelves, and in hard to reach corners.
Ensure the 2-compartment sink method is used properly and keep plugs handy.
High temperature dishwasher is maintaining 71C at the dish surface after the final rinse cycle.
200 ppm QUATS sanitizer is available in the dispenser.

General:
A laundry machine has been added to the back area by the mop sink.
Washrooms were in satisfactory sanitary condition.
All lights were functional.
Staff wear hair nets and clean aprons. Glove use discussed with the manager on site.

Pest Control:
No pest activity noted during the inspection.
Facility is monitored by a professional pest control company.
