301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): A box of hot cup lids and 1 medium sized salad spinner were stored in the staff washroom. This could result in potential contamination of food contact surfaces. Staff removed both items out of the washroom. Salad spinner was put in dishwasher.
Corrective Action(s): To ensure that all clean utensils/food contact surfaces are protected from contamination, please store them in sanitary manner and in a sanitary place. Washrooms are not acceptable for storing dishes/utensils/equipment or food contact surfaces.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): 1 of the handwash sinks in the back was out of liquid soap. Staff refilled the soap dispenser at the time of inspection.
Corrective Action(s): Please ensure that all handwash sinks have adequate supply of hot and cold running water, liquid soap and single use paper towels during facility operation.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): QUATS sanitizer spray bottle were tested and the concentration recorded above 200ppm. Please note that sanitizing food contact surfaces with extremely high concentration of sanitizing solution may result in potentional food contamination during food handling. Staff prepared new sanitizer solution as per the manufacturer's instructions and concentration recorded ~200ppm.
Corrective Action(s): Always follow manufacturer's instructions when preparing sanitizer solution to prevent risk of food contamination.

Routine inspection conducted.

Findings:
- General sanitation of the facility was satisfactory.
- Temperature of cooler including walk in cooler, prep cooler, undercounter coolers recorded at or below 4C.
- Stainless steel freezer at -18C.
- Undercounter freezer in bar area at -21C
- Some dishes were being cooled down at the time of inspection. Staff is aware of cooling curve and to store potentially hazardous food in cooler within 2 hours.
- Handwash sinks in the bar area and kitchen had adequate supply of hot and cold running water, liquid soap and single use paper towels.

- High temp mechanical dishwasher reached 72.9C on dish level during rinse cycle.
- Glass dishwasher available in bar area and concentration of iodine recorded at 12.5ppm
- Ice machine was maintained in good sanitary condition.
- Food handling practices were satisfactory.
- Staff has valid FOODSAFE Level 1 certificate (Exp July 14, 2024)
- No signs of pest activity observed.
