Observation: The kitchen dishwasher has no sanitizer in the rinse cycle.
Corrective Action(s): Get this fixed. Repair person was called during the inspection and was going to be coming this afternoon. Until then, wash the dishes in the dishwasher and then soak in sanitizer solution in one of the sinks for 2 minutes and then air dry.

Observation: 1) Raw meats are stored in the back inserts of the prep cooler beside the grill while vegetables and cheese are stored in the front. This can lead to cross contamination of the vegetables and cheese if the raw meats fall into it.

2) Knives are being stored in a sanitizer solution.
Corrective Action(s): 1) Store raw meats in the front inserts and cheese, vegetables in the back inserts as discussed.

2) Do not store knives in a sanitizer solution. Store them in ice water or a clean empty container.

Observation: A temperature log is not being maintained.
Corrective Action(s): Start monitoring and recording cooler and hot holding temperatures daily.

Observation: The Manager does not have Foodsafe Level 1 Certification.
Corrective Action(s): In the operator's absence, the manager on duty should have FS Level 1 certification. Get this done by Jan. 31, 2020.

-Operator has indicated that he's too busy at the store to be operating his mobile truck so he will not be going through the approval process at this time.
