306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) The exhaust canopy requires to be professionally cleaned, as the service sticker indicates this should of been done in November 2022. The build up of grease and dust is a fire hazard and will attract pests.
2) The floor in food processing and service areas, and in the dishwashing room has accumulated dirt and stains on them. This is especially seen along the base of walls; under equipment, shelves, and prep tables; and high traffic areas. This will attract pests.
Corrective Action(s): 1) Immediately call a company to clean and service the exhaust canopy. Ensure the professional cleaning of this equipment is done as at least every 6 months.
2) Deep clean the floor to remove the dirt and stains. Ensure to move equipment, shelves, racks and prep tables so the floor underneath is exposed and can be cleaned. Increase the frequency the floor is scrubbed and deeply cleaned.

Observation: The floor in the dishwashroom room is pitted and the epoxy paint is wearing away. This is exposing the cement underneath and the floor is no longer smoother, durable or cleanable. This will attract pests.
Corrective Action(s): Repair/reseal the floor so it is durable, level, sealed, and cleanable.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; hot holding units 60C of hotter; thermometers present; and temperatures recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 71.1C at the plate's surface, as per max/min thermometers.
- Hand sinks stocked with liquid soap, paper towels and running hot and cold water.
- Quats sanitizer in cloth buckets had strength of 200ppm. Test strips present.
- All foods stored in food grade containers; covered; date coded; foods stored in groups with proteins separate from RTE foods; and foods stored 6" off the floor on racks and shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Improvement needed in the mentioned areas. Staff explained that an external company is now contracted for maintenance and house keeping.
- Exhaust filters are clean and done monthly by staff.
- No signs of pests. A professional pest company is contracted to monitor for pests.
- FoodSafe certified staff present, or staff possess a recognized equivalent course.
- All cookware, utensils, food storage containers, and lids are in good working order.
