Main Kitchen
- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, stand-up) at < or = 4C
- Freezers (walk-in, stand-up) at < or = -18C
- High temperature dishwasher is available. Final rinse temperature reached 71.2C (Minimum 71C) at the plate level. Recommend to increase the final rinse temperature to have greater safety margin.
- 200 ppm Quat sanitizer available in buckets with wiping cloths and from dispenser
- Ventilation hood is maintained. Maintenance performs cleaning monthly. Professional service is provided every 6 months.
- Dry storage is maintained. Bulk food containers and scoops are maintained.
- Ice machine is maintained. Ice scoop is stored in a sanitary manner.

- Steam tables at > or = 60C. Some were not in use during inspection. Ensure they are capable of maintaining foods at 60C or greater.

- General sanitation is good
- Premise is well lit. Lights are equipped with shatterproof covers.
- Temperature monitoring system is in place
- No signs of pests observed during inspection. Service reports will be sent to the health inspector.
