Observation (CORRECTED DURING INSPECTION): One of the handwash stations, along the cook line, was noted with no paper towel in the dispenser at the start of the inspection.
Corrective Action(s): **Issue corrected at the time of inspection** Paper towel was refilled at the dispenser. Please ensure that all handwash stations are stocked with paper towel and liquid soap at all time.

Observation: 1. 20+ fresh mouse and rat droppings noted on the floor below the storage rack in the dry storage area.
2. 5 - 10 flies noted in the bar area.
Corrective Action(s): 1. Clean, sweep and sanitize the area noted with droppings. Seal off the gap.
2. Keep bar area clean. Continue to work with your pest control company to mitigate and eliminate the fly issue.

Observation: Gap (light noted coming through, appears able to fit the size of a pencil) noted below the storage rack (below the dry ingredient bins) in the dry storage area. Mice and rats are coming in through this gap as evidenced by the large amount of fresh droppings noted on the floor right by the gap.
Corrective Action(s): Install a door sweep or an alternate device that will prevent pests from entering into the kitchen area.

Observation: Black buildup/ stain noted on the wall and floor by the main large dish washer.
Corrective Action(s): Clean and sanitize the noted areas and maintain in a sanitary condition.

Observation: 2 ice buckets noted with cracks going all the way through at the bases.
Corrective Action(s): Remove the ice buckets and replace with ones in good condition. Anytime food contact utensils or equipments are noted broken, they should be immediately replaced in case any of the pieces break off and become a physical contaminant to food.

Observation: Missing floor tiles noted below the 3-compartment sink and below the rack across from the walk-in freezer.
Hole noted on the wall below the main large dish washer.
Corrective Action(s): Repair the missing floor tiles and hole in wall as all areas in the kitchen preparation and storage areas must be in good condition to allow for proper cleaning and sanitation.

Routine inspection conducted today:
Handwash stations, accept for one of the units on the line, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Food stored protected, in the proper storage hierarchy and stored off the floor.
Hot hold units were holding hot food at over 60.0C.
Sink & Surface Cleaner Sanitizer available in spray bottles - all detected with adequate concentration.
Interior of the ice machine, fume hood, cook line and utensils were noted cleaned and stored in a sanitary condition.
Proper thawing observed in the 3-compartment sink.
High temperature dish machines noted in-use. Larger unit was able to reach 180.0C at the temperature gauge and 74.9C at the plate level during the rinse cycle. Smaller unit was able to reach 187.0C at the temperature gauge and 71.4C at the plate level during the rinse cycle.
High temperature dish machine in the bar area was able to reach 71.0C at the plate level during the rinse cycle.
Valid FOODSAFE level 1 certificate verified during the inspection.
