Observation: Back exterior door had gaps underneath the door. All doors should be tight-fitting. All potential entry points should be sealed. This will prevent pests from entering the premises and contaminating food and food contact surfaces with disease causing organisms.
Correction: Install a new seal underneath the back exterior door.

Comments

General comments:
* the shelving unit in the kitchen has one shelf that is showing rust and is rough to touch. All surfaces must be smooth, durable and cleanable. Please re-finish surface (e.g. apply painted wood)
- QUATS was at 400ppm at dispenser and in spray bottles.
- Chemical dishwasher had 100ppm chlorine.
- No signs of pests observed. Pest control comes 1X/mo
- All coolers at 4C or less
- All freezers at -18C or less
- All hot-holding units holding foods at 60C or above
- Foodsafe certified staff present
- Temperature logs kept for coolers/freezers, cooking and cooling (no reheating done)
- Sanitizer concentration logs kept
- Exhaust fan was serviced and cleaned.
- Ice machine was clean and free of mould.
- Overall sanitation very clean
- Hand wash sink and liquid soap and single-use paper towel.
- Dry storage areas were organized
- Foods in coolers/freezers were covered.
